Yuzu is a fragrant Japanese citrus, sharper and more aromatic than lemon, prized in Japanese cooking for its perfume as much as its juice. Wakayama, already the heart of Japan's ume country, is also known for its yuzu, so this umeshu pairs two local specialities. Nakata Foods, founded in Tanabe in 1897, sits beneath the UNESCO-listed Kumano Kodo pilgrimage trails; here it lifts its classic ume base with that bright, fragrant citrus.
