Il piccolo frutto carnoso del pepe contiene un solo seme che, raccolto non ancora maturo, rappresenta il pepe verde,

Il pepe, originario dell’India, arrivò nel mondo occidentale circa duemilacinquecento anni fa, incontrando l’incondizionato favore di medici e gastronomi.
Si sapeva così poco della pianta di pepe che in epoca imperiale si era diffusa la leggenda che fosse raccolto dalle scimmie, poiché la pianta germogliava in luoghi inaccessibili all’uomo.
Il piccolo frutto carnoso del pepe contiene un solo seme che, raccolto non ancora maturo, rappresenta il pepe verde, maturo ed essiccato diventa il pepe nero, mentre liberato dalla polpa è il pepe bianco. Gli antichi, conoscendo solo i grani ma non la pianta, incorsero nell’errore di credere che pepe bianco e pepe nero fossero due alberi diversi.

PEPE BIANCO MUNTOK – OCEANO INDIANO – E’ tra le varietà di pepe più pregiate al mondo, caratterizzato da un sapore elegante e delicato. Si abbina perfettamente a tutti i tipi di pietanze, in particolar modo al pesce.

PEPE CUBEBA – ISOLA DI GIAVA - Originario dell'Isola di Giava fu scoperto da John Parkinson intorno alla metà del 1600. È un pepe leggermente dolce, con sfumature di sapore che tendono al Cardamomo e al Chiodo di Garofano e con un retrogusto mentolato. Ideale per chi ama un pepe poco piccante, ma molto aromatico. Indicato per tutti i tipi di piatti.

PIMENTO – MESSICO - Si caratterizza per le sue bacche particolarmente grandi e lisce. Ha la caratteristica di avere un sapore che ricorda la Cannella, i Chiodi di Garofano, la Noce Moscata, tutto riunito in una sola bacca. È un pepe che va frantumato a mano, con un pestacarne oppure un mortaio. Ideale per creazione gastronomiche sia dolci che salate.

PEPE DI SZECHUAN – CINA - Chiamato anche “Fagara”, non è in realtà un pepe ma una bacca di colore rosso molto scuro proveniente dalla Cina. Dopo l’asportazione dei piccoli semi amari, che si trovano al suo interno, le bacche vengono lasciate seccare al sole. È un pepe dal sapore fresco con una leggera nota di limone. Ideale per carni di vitello, asparagi selvatici, mousse al cioccolato e sorbetti.

PEPE NERO DI SARAWAK – MALESIA - Sarawak è il più grande tra i due stati malesiani nell'isola di Borneo. È da questa terra lontana e misteriosa, caratterizzata da vaste aree di foresta pluviale sia di pianura che d’altipiano, che proviene il Pepe Nero detto appunto di Sarawak. Ottimo utilizzato a fine cottura sulla carne.


PEPE ROSA - SUD AMERICA - E' anche noto come “falco pepe”, cresce sugli altopiani della Bolivia, Cile e Perù su alberi sempreverdi che possono raggiungere i 7 m di altezza. Non si tratta di un vero e proprio pepe, bensì di una bacca che, grazie al suo aroma del tutto simile a quello del pepe viene appunto indicata come pepe rosa. Ideale con carni bianche, pesce, capesante e mousse al cioccolato.

PEPE VERDE – INDIA – Pepe poco piccante ma dalle spiccate qualità aromatiche con una gradevole nota di freschezza mentolata. Ideale per la preparazione di salse destinate a piatti di carne (per esempio Filetto di Chianina Bembo con salsa al Pepe Verde) ma anche per pesci alla griglia. 

PEPE DI TIMUT – NEPAL - Ha bacche piccole e scure, un aroma intenso e forte, con un’eccezionale nota agrumata che ricorda il pompelmo e il complesso profumo del frutto della passione. Ideale per carni bianche, anatra, gamberi, aragoste, molluschi. Accompagna divinamente anche i dessert, infatti si consiglia di associarlo al cioccolato, al gelato, a macedonie di frutta, a mousse e semifreddi. Si utilizza rompendo le bacche nel mortaio o con il macina-spezie, e successivamente tostandole qualche attimo a secco in padella calda.

MELANGE BIANCO BEMBO – INDONESIA – BRASILE – VIETNAM – SARAWAK - Pepe bianco in grani, profumato e delicato, ha sapore più dolce e tenue rispetto al pepe nero. Si adatta perfettamente a tutti i piatti dal sapore tenue, come quelli a base di pesce o di carni bianche, perfetto per aromatizzare anche dolci e dessert. 

PEPE VERDE VANIGLIATO – BORNEO – E’ molto aromatico, poco piccante e con una nota di freschezza mentolata. L’essiccazione delle bacche avviene insieme a baccelli di vaniglia del Madagascar, che ne esaltano l’aroma. Ottimo su crudi di pesce e crostacei. Da provare in infusione nel latte caldo per la preparazione di creme e dessert.

PEPE LUNGO DEL BENGALA - Il Pepe lungo del Bengala è una varietà di pepe lungo a forma di cilindro, originario del Bengala. Ha un sapore piccante, con un retrogusto dolciastro. È un ingrediente culinario popolare usato in molte cucine asiatiche, tra cui la cucina indiana, cinese, thailandese e vietnamita. È anche un ingrediente versatile che può essere usato per arricchire salse, marinate, zuppe e piatti di carne. Può essere macinato o usato intero. Oltre al suo sapore, uno dei maggiori vantaggi del pepe lungo del Bengala è la sua versatilità, poiché può essere usato in una varietà di ricette per aggiungere una leggera nota piccante.

PEPE DELLA CAYENNA - Spezia originaria del Sud America, è comunemente conosciuta nella forma macinata. Il termine cayenna molto spesso è erroneamente utilizzato per indicare qualsiasi tipo di peperoncino, col nome generico di pepe di Cayenna. In America è usato comunemente il termine "Red pepper" per indicare la polvere di peperoncini di Cayenna che si caratterizzano tutti per la particolarità di essere allungati (arrivano a 10 cm) e sottili con la punta spesso arricciata. La polvere di Cayenna è molto fine e omogenea, caratterizzata da un alto livello di piccantezza. Infatti, se ne sconsiglia l'uso in abbinamento al Pepe Nero. È un ingrediente comune in diverse cucine del mondo, inclusi piatti indiani, messicani, cajun e creoli. Viene utilizzato in salse, stufati, marinature, e come condimento per carni, pesci e verdure.

PEPE DI SELIM – AFRICA - I baccelli del Pepe di Selim contengono ognuno circa 5-8 semi. La fragranza è aromatica e penetrante, talvolta con sfumature di affumicato. Gli aromi rivelano note di noce moscata, con sentori mentolati. Viene usato per molte preparazioni tradizionali come zuppe, umidi di carne e anche per la carne al barbecue. Poiché il baccello porta con sé la parte aromatica, mentre il seme aggiunge piccantezza, si consiglia di aprire il baccello, separare i semi e di passarli entrambi al mortaio o nel macina pepe.

BACCHE DI VERVEINE – VIETNAM - Le bacche di Verveine sono prodotte in Vietnam in maniera del tutto artigianale. Si tratta di una bacca dal sapore marcatamente fruttato e leggermente acidulo, con un leggero retrogusto pepato. Si sposa perfettamente con piatti di pesce e verdure.

PEPE NERO BEMBO – INDONESIA – BRASILE – VIETNAM – SARAWAK - Il pepe nero è davvero il re delle spezie e con i suoi grani piccanti e aromatici insaporisce moltissime pietanze nelle ricette di tutto il mondo. Con i grani interi si arricchiscono brodi, salami e salsicce, mentre macinati al momento aromatizzano con decisione carne e pesce ma anche pastasciutta (pensiamo agli spaghetti cacio e pepe della tradizione culinaria romanesca), zuppe e risotti. Ottimo anche per dare un sapore più deciso ai formaggi e alle verdure dolci come finocchi, carote e piselli. Il pepe nero è così diffuso che compare anche nelle più famose miscele di spezie come il Baharat, la creola e il curry.

Overall sound thesis worthy of thoughtful consideration
Format: Kindle
Choudary’s book has the tag line, “Who wins when AI restacks the knowledge economy.” While the book is annoying in sections, vague in others, and prone to jargon in yet more locations, the basic thesis is sound and compelling. It’s worth considering. Choudary’s main argument is that the winners after AI technology is widely adopted will be those who take a systems view of their business rather than simply upgrading individual elements within it. He backs this with several examples based on past technological disruptions and hypothetical case studies. He argues that the best advantages from AI will come from improved communication and managing risk. He supports these arguments reasonably well within the chapters. He also includes 10 Takeaways at the end of each chapter, which is extremely helpful for recapping and making sure the reader understood the thesis. What gets annoying is Choudary goes back to the same case studies again and again and again. I reached the point of saying, “the horse is dead. Please stop flogging it.” Next, some of his arguments about things like “managing risk” are vague—there’s not enough about specific risks to be useful, which leaves AI as a magic wand to wave. Finally, as with many business writers, Choudary occasionally (but not overwhelmingly) drops into jargon like “technological solutionism.” Overall, I recommend the book. It’s made me think, even as I struggle to apply the principles to my own business.
