Our Bottled in Bond Bourbon is a high-rye expression crafted with precision and patience. Made from a mash bill of 61% corn, 24% malted rye, and 15% malted barley, it showcases the bold character of malted rye—offering a rich grain profile layered with baking spice notes like clove and cinnamon.

We ferment this bourbon with the same single malt yeast strain used in our wheated bourbon, bringing out deep, nuanced flavors. It's then aged for at least five years, exceeding the Bottled in Bond requirement of four. Our barrels are built from staves seasoned for twelve months, reducing tannins for a smoother, more balanced whiskey. Each barrel undergoes a medium toast before receiving a three char, a process that enhances complexity while maintaining access to the deep flavors within the wood.

Split between two distinct aging environments—one temperature-controlled, one exposed to the elements—this bourbon develops layers of depth and character, making it a standout in our lineup. Bottled at 100 proof, it’s a true testament to our dedication to craft.
