Garment-dyed fabrics are dyed after they have been cut and sewn into garments. This means that the dye can be specifically chosen for each garment, and the dye will not fade or run in the wash. Garment dyed fabrics are also softer and more comfortable than other types of fabric. It's the most expensive method of coloring shirts but results in a broken-in feel with 99% of the shrinkage being taken out in subsequent washes. Otherwise heavier shirts don't have the softness of thinner, tighter weave fabrics.
