He makes his wonderful natural wines in Hautes Corbières, a region in the Roussillon where it is hot and dry but strong winds from the Pyrenees help retain freshness and acidity in the grapes.
This is 100% Cinsault from 40-60-year-old organic vines grown on north-facing slopes of stony clays in the small town of Paziols. The grapes were harvested by hand with small crates, then underwent whole bunch maceration for six days before maturation for eight months in stainless steel tanks. On the nose you'll find spice, blueberries and blackberries, with good length, balance and a slight tartness on the palate.
