Mung beans are extremely healthy because of their high levels of minerals and vitamins. They are also quite filling and high in protein & fibre. Mung beans are prepared in the same manner as lentils. Fibre-rich protein source. Add to vegetable stews to add texture.

Place in a pot and cover with water above the beans. 4. Boil for 45-60 minutes and ensure that there's always water in the pot. 5. Add more as necessary.
