Wanneer de druiven hun piekrijpheid bereiken, start de familie Pasqua het oogstproces. Het transport van de druiven naar de pers duurt 11 minuten. Na een zorgvuldige selectie worden de druiven geperst, wat ook 11 minuten duurt. Bovendien worden de schillen slechts 11 minuten meegefermenteerd, wat deze rosé zijn delicate roze tint geeft.
