Vanaf de 17e eeuw bezat de familie Bader-Nié wijngaarden in Chassagne-Montrachet en omgeving, terwijl Charles Mimeur, wijnbouwer uit de Maranges streek, eigenaar werd van het Château de Chassagne-Montrachet in 1919.  Sinds 2017 hebben Nathalie Bernard en haar broer Sébastien Fossier de dag dagelijkse leiding over Baeder-Mimeur. De wijn heeft een lichte robijnrode kleur. In de neus aroma's van frambozen, zure kersen en rode bessen. Op het pallet is de wijn soepel maar tegelijk gesructureerd in het gehemelte en met een vlezige evolutie. De tannines zijn gepolijst en zorgen samen met het frisse fruit voor een plezierige afdronk. Lekker bij vakrensvlees, overige wit vlees groente schotels en of salades.
