De verschillen in ligging en bodem zorgen ervoor dat de druiven op verschillende momenten rijp zijn, waardoor er meerdere keren geoogst moet worden. Na de oogst vergist ieder perceel afzonderlijk gedurende ongeveer 19 dagen, waarna de wijn verder rijpt op

Deze wijn laat de Nebbiolodruif zien in al zijn puurheid. De druiven komen uit verschillende jongere wijngaarden van het huis, zo’n 10 tot 25 jaar oud. De verschillen in ligging en bodem zorgen ervoor dat de druiven op verschillende momenten rijp zijn, waardoor er meerdere keren geoogst moet worden.

 Na de oogst vergist ieder perceel afzonderlijk gedurende ongeveer 19 dagen, waarna de wijn verder rijpt op roestvrijstaal, en, afhankelijk van het oogstjaar, voor een klein deel op gebruikt (neutraal) hout.  Hierdoor komt het karakter van de druif zoveel mogelijk tot zijn recht. De wijn heeft een uitnodigende, levendige neus met aroma’s van rozenknoppen, viooltjes, bessen, donker fruit, lavendel en munt. Elegant en complex van smaak met lagen van sappig rood fruit, sinaasappelschil en zoete specerijen, ondersteund door aardse en minerale tonen. Jong al prachtig om te drinken, maar de wijn zal zich in de komende jaren mooi ontwikkelen
