Dit bijzondere stuk vlees komt het beste tot zijn recht bij een medium-rare bereiding. Grill de Presa op hoge temperatuur en laat het daarna even rusten voor de perfecte bite.

Iberico varkens worden traditioneel grootgebracht in Spanje en voeden zich met eikels tijdens de beroemde Montanera-periode. Dit zorgt voor een unieke marmering en een subtiele, nootachtige smaak.

De Montanera loopt van eind oktober tot maart, wanneer de varkens vrij rondlopen in de uitgestrekte natuurgebieden van Extremadura en de vallei Los Pedroches. Gedurende minimaal 60 dagen genieten ze van een dieet van eikels en kruiden, waardoor hun vlees uitzonderlijk mals en smaakvol wordt.
