De geschiedenis van de familie Mandois is begonnen in 1735 toen de familie besloot eigenaar te worden van wijngaarden in de Champagne. Jean Mandois, een tijdgenoot van broeder Oudart, was in die tijd eigenaar van enkele percelen op de hellingen van Epernay en werkte daar ook aan.

Deze lange familiegeschiedenis beleefde een echte revolutie in 1860, toen Victor Mandois (Jean's achterkleinzoon), voorloper en visionair, besloot om Champagnewijnen te vinifiëren en op de markt te brengen in Epernay.
