Herkomst & Druiven
Deze bijzondere Vin Santo “della Torre Grande” wordt gemaakt in de historische kelders van Castello di Poppiano, in het hart van de Chianti Colli Fiorentini DOC nabij Florence. De wijn is samengesteld uit de klassieke witte druiven Trebbiano en Malvasia, zorgvuldig geselecteerd en traditioneel gedroogd op rieten matten. De rijping vindt plaats in kleine houten vaten, de zogenaamde caratelli, gedurende minimaal vier jaar in de eeuwenoude Torre Grande.

Smaakprofiel
In het glas schittert een diepe goudgele tot amberkleurige gloed. De neus is verfijnd en rijk, met aroma’s van gekonfijte abrikoos, sinaasappelschil, honing en amandel, aangevuld met subtiele tonen van vanille, noten en een vleugje tabak. De smaak is vol en rond, met een perfecte balans tussen zoetheid en frisse zuren. De lange, elegante afdronk brengt warme tonen van gedroogd fruit en zachte specerijen.

Foodpairing
Vin Santo is de klassieke begeleider van cantuccini, maar deze wijn gaat verder:

  • Heerlijk bij gerijpte kazen zoals pecorino of blauwschimmelkaas.

  • Prachtig in combinatie met pure chocolade of desserts met noten en honing.

  • Een gastronomisch hoogtepunt naast foie gras of als meditatieve wijn om puur van te genieten.

Serveertips

It only took him about 3-5 minutes to finish it, but he’s about 60lbs, so maybe a bigger size bowl would be better for him. Max capacity of this one is 190 ml. You do have to monitor your dog with this bowl - mine tried to dismantle the bowl when it was empty, trying to get more out of it. Overall I think it’s a fun way to get your dog to drink a little bit more with diluted yogurt, broth, etc.

I wasn’t diluting enough so the ball doesn’t move smoothly in the video, but it really does work! The cover is very well made and sturdy. I didn’t notice it sliding around at all. My dog also did not try to get the ball out (loves to tear apart toys) or tip it over, but I could see that happening. I wouldn’t use unsupervised unless you have a small dog. Please make a larger size!!!!

I blend plain, unsweetened yogurt with a little powdered pumpkin & apple pectin and thin it down with water so the roller ball can easily rotate. It's sturdy and it doesn't slip on the floor, which is good. However, I give it only three stars because the bowl inside is a ridiculous design. Instead of the inside surface being a gently sloping, smooth surface, the "legs" underneath protrude up through the inside (see photo). It makes stirring and cleanup much more difficult than it needs to be. Presumably, it's made using injection molding so it should be easy to design it with a smooth finish.
