Geroosterd, rood vlees, barbecue, lamskoteletten en verschillende kazen.

Klimaat:
Lodi: Overdag is het hier warm en droog in de zomer met 's nachts veel afkoeling. Passo Robles: Mediterraans klimaat met warme droge zomers en milde winters.

Ondergrond:
Druiven uit Lodi 90% en Paso Robles 10%. Lodi: Diepe zanderige gronden waardoor de wortels diep moeten om water te zoeken. Paso Robles: Bodem met meer kalk en keien.

Vinificatie:
85% Cabernet Sauvignon, 10% Merlot en 5% Petit Verdot. De wijn wordt apart gefermenteerd onder gecontroleerde temperatuur in inox kuipen. Daarna wordt de wijn geblend en gelagerd op 1 jaar oude Amerikaanse en Franse eiken vaten 15%. De rest gaat op neutrale oudere vaten. Na negen maanden wordt de wijn terug geblend en gebotteld.
