Vinificatie: na het persen van de druiven wordt de most gescheiden en ondergaat het een eerste filtering om het te klaren. De gisting vindt plaats in autoclaven bij vrij lage temperaturen gedurende een periode van ongeveer 20 tot 30 dagen. Tijdens de gisting ontstaat er schuimvorming. Om de gisting te stoppen, wordt de most verder gekoeld en gefilterd voor het bottelen, wat al gebeurt in november, twee maanden na de oogst.

Smaak: het gehemelte is fris en geurig, mede dankzij de juiste balans tussen zoetheid en zuurgraad; de fijne ontwikkeling van koolzuur maakt hem delicaat romig en geeft hem een aanhoudende en elegante afdronk
