Ossian 2022 Verdejo Castilla y León

Ossian 2022 is de icoonwijn van Ossian Vides y Vinos, het witte vlaggenschip uit Segovia dat is gebouwd op pre-phylloxera Verdejo van meer dan een eeuw oude stokken. Als project van de familie achter Pago de Carraovejas draait Ossian om één missie: laten zien hoe groots Verdejo kan zijn als je werkt met oude stokken, biologisch wijngaardbeheer en vinificatie op Bourgondische leest. Wat voor wijn is Ossian 2022 precies? Het is een krachtige, houtgerijpte Verdejo met veel diepte, spanning en bewaarpotentieel, gemaakt in de stijl van grote witte wijnen in plaats van een makkelijk, fruitig glas.

Wijngaarden en regio

De druiven voor Ossian 2022 komen uit Spanje, uit Castilla y León, uit wijngaarden rond Nieva in de provincie Segovia. Het gaat om een mozaïek van percelen op de terrassen van de rivier de Voltoya, met zand- en kiezelrijke bodems die de phylloxera destijds hebben tegengehouden, zodat een belangrijk deel van de stokken nog altijd ongeënt is en leeft van pre-phylloxera wortels. Veel van deze Verdejo-stokken zijn 100 tot 200 jaar oud en worden als bush vines geleid, met zeer lage opbrengsten en opvallend geconcentreerd fruit. De wijngaarden worden volledig biologisch bewerkt, met natuurlijke bemesting en veel aandacht voor bodembiologie, zodat de planten zich goed aanpassen aan het extreme landklimaat met koude winters, warme zomers en grote temperatuurverschillen tussen dag en nacht. Ossian positioneert deze wijngaarden nadrukkelijk als een stukje levende wijnbouwgeschiedenis, waarin Segovia-Verdejo en terroir centraal staan.

Vinificatie en rijping

De oogst voor Ossian 2022 gebeurt volledig met de hand, waarbij de druiven in kleine kratten naar de kelder worden gebracht en daar nogmaals streng worden geselecteerd. Daarna worden de trossen zacht geperst en wordt alleen het vrijlopende sap gebruikt voor de wijn. De most vergist met inheemse gisten in houten vaten en grote foudres van verschillende formaten, wat zorgt voor een langzame, gecontroleerde vergisting en extra textuur. Aansluitend rijpt de wijn ongeveer 9 maanden op de lies in Franse eiken vaten en foudres, waarbij regelmatig wordt geroerd om het contact met de gistcellen te vergroten en de romige structuur op te bouwen. Deze combinatie van oude stokken, spontane vergisting en rijping op hout geeft Ossian 2022 een duidelijke Bourgondische inslag, met veel spanning tussen zijn rijke mondgevoel en frisse zuurgraad.

Druivensamenstelling

Ossian 2022 is 100% Verdejo van biologisch bewerkte, zeer oude stokken, waarvan een groot deel ongeënt en meer dan 100 jaar oud is, wat direct terug te proeven is in de concentratie, complexiteit en mineraliteit van de wijn.

Proefnotities en serveertips

Ossian 2022 heeft een diepe, goudgele kleur met lichte groene en gouden schitteringen. In de neus komen aroma’s naar voren van rijpe peer en perzik, sinaasappelschil en witte bloemen, aangevuld met geroosterde tonen, vanille, een vleugje amandel en hints van gedroogd fruit en noten uit de rijping op hout. In de mond is de wijn vol, romig en breed, met een glycerische structuur, rijp steenfruit, subtiele kruidigheid en een duidelijke minerale ondertoon, terwijl de frisse zuren voor balans en lengte zorgen. De afdronk is lang en gelaagd, met terugkerende tonen van rijp fruit, specerijen en een verfijnd, licht rokerig accent, waardoor Ossian 2022 een uitgesproken gastronomische wijn is. Serveer bij voorkeur rond 10–12 °C in een ruim witwijnglas en combineer hem met gegrilde of gebakken vis, schaal- en schelpdieren, romige gerechten met paddenstoelen, gevogelte met botersaus of verfijnde groentegerechten waarin zijn krachtige maar elegante stijl volledig tot zijn recht komt.

Thank you for allowing me to try your NatureWise Vitamin D3. There are indeed so many reasons why we should supplement Vitamin D. It is necessary for so many crucial processes in our bodies; from helping us absorb enough calcium and helping us have strong bones and teeth.
