Each serve has just 4.1g of carbs and only 1g of sugar, making it ideal for those following a low-carb, keto-friendly, gluten-free, or diabetic-conscious diet. Plus, it’s super simple to whip up – perfect for busy days when you want a wholesome treat.

You will need:

• 240 g Lemon Slice Mix (1 pack)
• 2 large eggs
• 100 g salted butter (cold)
• 3 Tbsp lemon juice
  
• Zest from 1 lemon

Method

• Preheat the oven to 160°C (fan forced).
• In a bowl, rub the butter into the Lemon Slice Mix until combined and crumbly.
• Transfer half of the mixture to a lined 20 x 20 cm baking dish, pressing down firmly to form a flat layer. Bake for 15 minutes or until golden brown.
• To the remaining mixture, add the eggs, lemon juice, and lemon zest. Mix until smooth.
• Pour the mixture over the baked base and spread carefully. Bake for another 10–15 minutes, or until the top layer is firm.
• Allow to cool before slicing. Store in a cool, dry, dark place.
