The wine is pressed to stainless steel for a quick post fermentation settling

The wine is pressed to stainless steel for a quick post fermentation settling prior to being sent to 1000L amphora and foudre for maturation. This wine spent ten months in these neutral vessels prior to bottling without fining or filtration.
