It’s a blend of Negroamaro and Malvasia Nera grapes, harvested a little earlier than for the red wines, then cold macerated before clarification and fermentation in steel, also at low temperatures.
A fine and inviting nose has ripe yellow fruit and a spectrum of wild berries underpinned by spice. Crunchy on the palate, delicate fruit dances over the tongue balanced by gentle salinity and a slightly bitter, green almond finish. This is an excellent partner to most summer flavours, but it’s perfect with the Puglian traditional dish, frisa salentina – toasted bread topped with fresh tomatoes, extra virgin olive oil, oregano and sometimes capers and fresh fish.
