Produced at NOM 1146, Don Fulano Tequila masterfully combines traditional and modern techniques, originating from the renowned Tequilana Weber agaves of Jalisco's Los Altos and Los Valles regions. Cooked under low pressure in autoclaves and extracted using both screw and roller mills, it utilizes deep well water to enhance flavor through unique mineral profiles. The fermentation process is meticulously managed in open-air, stainless steel tanks using both proprietary yeast and 100% agave mixtures, sometimes including fibers to intensify the agave’s natural characteristics. Distilled twice using copper pot and column stills, this tequila is aerated and rested in stainless steel tanks, ensuring a smooth spirit that is additive free. This process delivers a tequila that respects traditional values while embracing contemporary production excellence.
