Al palato è delicatamente aromatico e di bello spessore, percorso da una gustosa vena fresco-sapida, di buona persistenza.Nella zona di Gioia del Colle è il minutolo il protagonista tra le varietà a bacca bianca. Felicemente acclimatatosi nel territorio nel corso dei decenni, è vitigno che raggiunge piena maturazione e che porta a vini piacevolmente fruttati, tanto freschi quanto avvolgenti. Vinificato e lasciato maturare in sole vasche di acciaio, quello di Polvanera spicca per profondità e per dinamicità. Un vino bianco per tutte le occasioni.
Anche come aperitivo, si abbina a risotti e paste con erbe aromatiche, frutti di mare, molluschi o crostacei. Ottimo anche con piatti di pesce e formaggi semistagionati.
