Shio koji (塩糀) is a cultured rice seasoning of rice koji, salt and water, a living culture whose active enzymes tenderise protein and build umami on contact. Shio koji (塩糀, salt koji) is one of Japan's oldest seasonings, made by combining rice koji, rice inoculated with the kōji mould Aspergillus oryzae, with salt and water and leaving it to mature. The koji's enzymes, mainly proteases and amylases, break down protein and starch, which is why shio koji both tenderises and deepens flavour in a single step. Long a quiet workhorse of the home kitchen, it found a wider audience with chefs in the 2010s as a way to replace several seasoning and curing steps with one.

What does shio koji do to food?

Two things at once. Its proteases break down protein, so meat and fish come out noticeably more tender and the flesh holds moisture better through cooking. At the same time the enzymes release free amino acids, which read on the palate as umami, alongside a faint sweetness from the rice. The effect is a cleaner, rounder savouriness than salt alone, with better texture. Used as a marinade it works in as little as thirty minutes, though a few hours or overnight gives the fullest result. Go easy on additional salt, as the koji is already salted.

What is shio koji?

Shio koji is a traditional Japanese seasoning made from rice koji, rice inoculated with the koji mould, combined with salt and water. The culture produces active enzymes, mainly proteases and amylases, that break down protein and starch on contact. This is why shio koji tenderises meat and fish while building umami at the same time. It has been used in Japanese kitchens for centuries and drew global attention in the 2010s as chefs found it could replace several seasoning and tenderising steps with one application.

How long should I marinate with shio koji?

For most proteins, coat them in about 10% of their weight in shio koji and leave for anywhere from 30 minutes to overnight in the fridge. Thirty minutes lifts seasoning and umami; a few hours or overnight gives the fullest tenderising. Fish needs less time than meat, as it is more delicate. Wipe off the excess before cooking, especially before high heat, as the rice sugars catch and colour quickly.

How should I store raw shio koji?

Keep it refrigerated, sealed, and use a clean spoon each time. Because it is raw and unpasteurised, the enzymes and cultures stay active, so chilling keeps it stable and slows further change. Stir it if it separates. Kept cold and clean it holds well; bring it back to a workable consistency at room temperature briefly before use if it has firmed up in the fridge.

Really great mouse, but terrible skates.
I absolutely loves this mouse. I usually have stuck to only using razer mice in the past. However I made the switch to this one and its honestly so great. I only really have one complaint and the rest is amazing. Pros: Battery life is honestly amazing. Its really quiet because it no longer clicks, its just haptic feedback like the ps5 controller. You can adjust when it actually clicks which is super cool just like a Hall effect keyboard, because it's the same tech. Mouse just feels great and the included grips are nice, but they do take some getting used to as they aren't what I was expecting. However I have come to like them. Cons: It's vey expensive for a mouse, there's a lot of competition and a variety of mice esp way cheaper. The stock skates are absolutely terrible, that's why I changed them jade's and now its perfect. No complaints after that. However for a mouse this expensive, I was hoping for better skates. I also don't really like the scroll wheel, to be fair I do come from razer mice so that might be why I hate it. It also takes some getting used to as the mouse is front heavy because of the switches on the mouse, but I bet you can fix that if you have a powerplay to balance it out. However I have this mouse for 2 months now and I absolutely love it and I wouldn't switch for another. The only thing I would change if you were buying this mouse today is to also order skates so you can replace them. Would be a 5/5 if it weren't for the terrible skates. TL;DR: Great mouse if purchasing, buy skates as well.

Huge Upgrade!!!
After just a week of using this mouse, I can confidently say this is the best peripheral purchase I have ever made. I initially wasn't in the market for a new mouse, until my scroll wheel broke on my razer mouse. I decided to just pull the trigger on the X2 Superstrike instead of purchasing another razer mouse. The mouse material feel is excellent, and the wheel is great as well. I've also seen some reviews disliking the skates on the X2 Superstrike, however I personally found them to be great. The haptic feedback mouse click seemed a bit gimmicky before I actually used it. Right off the bat, the mouse click feels incredibly responsive and similar to that of any high quality mouse. You get enough feedback and it doesn't feel that much different from a regular mouse click. But, you also have optionality to adjust a ton of settings, like accuation, feedback strength, etc. For gaming, with the right settings, this genuinely feels amazing, and that's before the performance upgrade. As many other reviewers have noted, it noticeably decreases latency on top of all of this. Another huge perk with this mouse I found, was that it's almost dead silent as well. No more loud clicking! My only critique with the mouse are the side buttons and the size. The side buttons are the only part of the mouse that feel "cheap". Because I use the side buttons often in competitive games, I notice it a lot more than probably most people would. I also have large hands, and this is the smallest mouse I have used. I got used to it pretty quick, but the mouse is on the smaller side. Nonetheless, if you are looking to upgrade your mouse and have the money, I would 100% recommend. This feels as impactful as going from a 60hz monitor to a 144hz+.
