Sourced from a single vineyard in the cool climate of Derwent Valley, Tasmania, this chardonnay is meticulously handpicked on a fruit day during the full harvest moon. After undergoing a whole bunch pressing, it experiences a wild fermentation in new demi-muid barrels and matures for 12 months sur lie. The final product is bottled unfined and unfiltered, boasting perfect natural balance. What distinguishes Domaine Simha, is Nav's distinctive winemaking philosophy. Nav's approach aims to minimize intervention, with the goal of moving the wine from vine to bottle using as few steps as possible. Consequently, his wines are left on lees until the final stages and are only racked once before bottling. Nav utilizes 100% whole bunches during fermentation, which occurs naturally in amphorae or large-format barrels. Additionally, he adheres to the lunar calendar for harvesting, selecting fruit or flower days for picking.
