The cooking vessel is constructed from AISI 316 stainless steel (25-40/10 thickness), specifically designed for processing acidic products without corrosion.
Indirect Electric Heating System
Heating is achieved through armored elements made of INCOLOY-800 alloy, precisely controlled by an electronic board with automatic activation 4°F before the setpoint to prevent power waste.
Integrated 2-Arm Mixer with Removable Scrapers
Features a mixer made of AISI 304 stainless steel with two arms and four removable POM scrapers. The mixer can be completely removed for easy cleaning, and its speed and rotation times are programmable via the control panel.
7-Inch Touch Screen Control Panel
Equipped with a multifunctional keyboard and a 7-inch resistive touch screen for intuitive operation, clear messages, and comprehensive control over cooking parameters and mixer settings.
Multiple Cooking Modes
Offers 5 distinct cooking modes (6 with optional cooling), allowing for precise setting of working temperature, cooking type, and time to suit various recipes.
Programmable Multiphase Cooking
Enables creation and editing of multiphase cooking programs, where each phase can have specific cooking types, temperature, time, mixer settings, and custom text messages.
Precise Temperature and Pressure Control
Temperature is controlled by two probes (product and jacket), while pressure is managed by a pressure switch set at 8.7 PSI, a safety valve (12.3 PSI), a vacuum valve, and an analog pressure gauge.
