This is the fascinating story of amaranth, a crop from the ancient past that is being resurrected as a modern, nutritious, gluten-free food.

First used over 6000 years ago, amaranth reached its peak of popularity in the time of the Aztec empire in the early 1500s. After the arrival of Cortez and his Spanish conquistadors in 1519, amaranth nearly disappeared from history.

Now, nearly 500 years later, this "ancient grain" is being grown once again for its many valuable characteristics. Amaranth is used in many kinds of foods, from cereals to breads to snack bars, and can be used in a wide range of recipes, some of which are included in the book.

Written in an engaging, informative style with over 40 color photos and illustrations, this book is suited to a variety of audiences, including:

  • Consumers interested in trying new types of healthy food
  • Gardeners looking for colorful, fun new plants to grow
  • Farmers interested in diversifying their cropping systems
  • Environmentalists looking for low-impact food crops adapted to a changing climate

This book addresses a wide range of topics on amaranth, including its colorful history, nutrition, food uses and other products, biology and regions of adaptation, and prospects for expanded use. A special comparison with quinoa is part of the nutrition section.

For those interested in growing amaranth, whether in the garden as an ornamental, vegetable, or grain, or on a farm, detailed information is included on how to plant, manage, and harvest the crop.

Recipes for amaranth bread, muffins, pancakes, cookies, and pressure cooker options are included.

Terrible pillows
Size: Queen - Pack of 2, Style: Medium, Configuration: Pillow
These pillows might be fine if you need them for a decorative sham, but definitely NOT to sleep on. They are super lumpy and soft, days after taking them out of package. It seems like there are just bunches of cotton strips in a row that are hard to fluff. They are also dark in some areas, so it looks like the pillow is stained, when in fact it's whatever material the stuffing is. I can't return them because they won't fit back in the box. Super disappointing.

Comfortable from the first night
Size: Queen - Pack of 2, Style: Medium, Configuration: Pillow
I found them comfortable and with good support for the head and neck. They are wide in size and feel soft when lying down. After several days of use they continue to retain their shape without problem.

Not as Firm as I had hoped
Size: Queen - Pack of 2, Style: Medium, Configuration: Pillow
A good pillow. However, there is quite a difference between the manufacturer's and my idea of "medium firmness". I found this pillow much softer than I had anticipated. I'll have to go for firmer for my next purchase.

I admit when I was wrong.
Size: Queen - Pack of 2, Style: Medium, Configuration: Pillow
3/29/26 - I took the pillows and put them in my dryer on steam refresh for the default 10 minute cycle. OMG - they fluffed up and evened out to be soft and comfortable, no lumps whatsoever. If you like a soft pillow with some support, but not firm support, THIS is what you want. I am truly amazed. ================================================== Previous review---They arrived in a vacuum seal bag. When you cut the bag and they inflate, they inflate lumpy like. Some areas are thick and some have to fill so, not very good. I am going to try washing them and drying them to see if they fluff up better. Will post the results in a day or two.

Immediate neck and back pain
Size: Queen - Pack of 2, Style: Medium, Configuration: Pillow
Nice full pillows that holds its shape, BUT was NOT good head and neck support. I noticed an immediate difference. From non existent to growing neck pain in the first night’s use, through the week.
