The agave is carefully selected and harvested in the Jalisco region. The taste of cooked agave is dominant and brings warmth and comfort to every sip. Maturation is around 7 8 years. The taste of cooked agave is dominant and brings warmth and comfort to every sip. Maturation is around 7-8 years. After harvesting, the agaves go through a whole process, they are heated to high temperatures and then crushed. The juice is then fermented and distilled. We make two distillations in copper stills. After the second distillation the tequila is at 55% Vol. We keep the tequila in stainless steel tanks for six months, in order to let the distillation oils infuse. The bottling is done at 38% Vol.
Diego & Maria Tequilas are from the Jalisco region. They are produced from Blue Agave.
