It all comes from the Côte de Nuit and Côte de Beaune sites, which are considered the most prestigious in the wine-growing region. First, the grape must is pressed, fermented and then distilled. Distillation follows the most modern standards and guarantees products of consistently high quality. After distillation, the brandy is allowed to mature in selected oak barrels. This production step is very costly and confirms the high quality of Vedrenne's pomace brandy. The maturation phase is also unusually long, lasting ten years. This long maturation period ensures an intensive interaction between wood and spirit, and the pores in the wood mean that the spirit is constantly in contact with oxygen. This contact makes the Marc des Hospices de Beaune a very smooth, top-quality pomace brandy. The spirit achieves a sophisticated complexity and a unique quality.
