Winemaking
Early handpicked Vermentino (66%) for broad savoury characters and Fallanghina (34%) for driving acid and freshness were lightly pressed together for a co-ferment in neutral French oak. The complete malolactic fermentation smoothed out the tart malic acid, and the wine was bottled unfiltered and unfined with a lick of residual sugar for some natural bubbles.
Vineyard
Grown by Chalmers, known for their Italian varieties. At their Merbein site in the Murray–Darling region, Chalmers focus on improving soil health through organic carbon to boost water retention. They use organic nutrients and mostly organic fungicides, avoid residual herbicides, and are trialling mulch to replace chemical weed control. Both Victorian vineyards are certified with Sustainable Winegrowing Australia.

Dedicated to our grandparents and a good beach day. Our Nan, Wilkie, used to be a swimming instructor and loved going to the beach. Grandad would (somewhat begrudgingly) join but wouldn’t swim. Instead, he would sit on the beach chairs fully clothed in dress shoes, slacks and a long-sleeve button-up, occasionally rolling up the sleeves if it got too hot.
Our Grandma always wore a touch of blue or yellow, no matter the occasion, so Kate painted the beach chairs and brollies in her favourite colours.
