Its secondary fermentation on laths and a maturation of 18 months in our troglodyte caves.
Lovely pink to salmon color. Lively but not aggressive, bright in the mouth, slightly acidulous. Lots of red fruits with a bit of pepper. This is great aperitif, but it is tasty enough to match perfectly any white meat and poultry, or even grilled fish.
