For the past 3-4 years, mother nature has not produced an affordable fruit-forward coffee.  Gesha varietals - from $60 to $100 a bag - have been the closest offering and those are tempermental at best to leave a lingering, unmistakeable fruited note with the consumer.  At selected farms, a very limited and virtually exclusive bio-chemistry has undertaken different approaches of fermentation, from blueberry washing tanks to sun-dried fruit on natural fermentations.  We have profiled these deliciously as medium roasts but they are lighter medium roast with "development stages" calibrated to hold the fruited notes.  These are virtually always lost in deeper medium profiles or dark, where time and temperature cook out the flavor and impose a woody characteristic that you often find on any bean.  What we can say about this batch is that prolific espresso can still be made with these beans - just grind tighter and lean toward 204 degrees with your espresso boiler.  We tasted true fruit throughout the shot, black, light-honied black, and moderately-creamed espresso.
