Flavor & Texture
Despite its pungent aroma, Taleggio offers a balanced and delicate taste. The interior is soft, rich, and creamy, with buttery notes and a gentle fruity tang that lingers pleasantly on the palate. The thin washed rind contrasts beautifully with the smooth interior, creating depth without overwhelming the senses.
How Taleggio Is Made
Taleggio is traditionally produced using cow’s milk and time-honored methods. After curd formation and draining, the cheese is placed into its signature square molds. During aging, the rind is regularly washed with a special solution that encourages beneficial bacteria while controlling mold growth. This process gives Taleggio its characteristic color, aroma, and flavor.
The cheese matures quickly and is ready to enjoy after approximately 6–10 weeks.
