The moment we roasted our last batch of Nahun Fernandez’s honey-processed parainema from last season we began looking forward to the new harvest. We had high hopes of the new harvest, which were met and exceeded. Nahun’s commitment to farming and processing excellence is abundantly clear in this coffee.
This coffee is wild and incredibly delicious. We’d dare to say this is one of the tastiest coffee’s ever to grace our lineup. This coffee is a mango-bomb of flavor - along with notes of ripe pineapple and floral lychee characteristics. Buy a bag or two of this coffee every week until it’s gone — you can bet we will be drinking of much of this coffee as we can before we have to say good bye again.
About Nahun’s Farm:
In March 2019, Ian visited Nahun’s farm and couldn’t have been more impressed. Nahun shares a processing facility with his brothers and father, which means they were able to collectively able to build a very impressive set-up. It was also clear that Nahun cares deeply about the quality of the coffee he is producing and is continually asking how he can improve the quality of his coffee. There were a lot of processing experiments going on when Ian visited Nahun’s farm – who impressed us with his knowledge and commitment to education. Nahun’s commitment to excellence at every level was abundantly obvious at his farm and that excellences translates into this coffee we are grateful to share with you.
This particular coffee is a honey-process Parainema. Which means the fruit is left on the coffee parchment while drying which produces a unique sweetness and body in the coffee. While Parainema is typically very citrusy, the honey-process produces sweet tropical fruit characeristics – it is still distinctly parainema, but in a way we have never had before.
