La Vecchia Dispensa has been producing balsamic vinegar since 1978, continuing a long-standing tradition in the Modena region, which is famous for its balsamic vinegar production. The company specialises in the production of traditional balsamic vinegar, which is made from cooked grape must (juice) of local varieties like Trebbiano and Lambrusco. This vinegar is aged through a complex and lengthy process that involves ageing in a series of wooden barrels of different types of wood (such as oak, cherry, chestnut) for a minimum of 6 years.
