This is carried through to the palate with citrus texture, mealiness, spice and a long finish – clean and textured with a generous almost savoury mouthfeel. There is plenty of flavour and a finish that is both rewarding and refreshing.
Two organically farmed vineyards – one was machined the other was handpicked – both went to 100% French oak of approximately 15% new. The Machined portion was kept clean to maintain vibrancy and acidity while the handpicked portion was allowed to go ‘feral’ and behave like the black sheep. The combination of the 2 though was superb and has shown a remarkable vibrancy yet complex lasting finish.
