Union Grand Cru ist die zentrale Cuvée von Aurore Casanova und vereint zwei Grand-Cru-Terroirs mit klar unterschiedlicher Funktion. Chardonnay aus Le Mesnil-sur-Oger liefert kalkige Spannung und Säure, während Pinot Noir aus Puisieulx Reife, Körper und Fruchttiefe einbringt.

In Zeiten zunehmender Reife ist der Erhalt von Säure eine der größten Herausforderungen im Champagner. Casanova löst dies nicht über technische Korrekturen, sondern über Komposition. Höherer natürlicher Alkohol wird akzeptiert, anstatt ihn durch Alkoholreduktion oder Ersatzlösungen zu umgehen.

Die vollständige malolaktische Gärung sorgt für Integration und Ruhe, ohne die strukturelle Spannung zu verlieren. Das Ergebnis ist ein Champagner mit Tiefe, innerer Spannung und Transparenz – trocken, präzise und nicht auf schnellen Charme ausgelegt.
