Bei kalter Verwendung: berguss unverdnnt mit bis zu 10%

Diese Couverture richtet sich an die professionelle Patisserie und die anspruchsvolle Confiserie und überzeugt durch ein sauberes, ausgewogenes Aromaprofil. Nappage neutral ist ein klarer Überguss. Bei warmer Verwendung: Überguss unverdünnt mit bis zu 30% Wasser, Fruchtsaft oder Fruchtmark zuerst auf 60°C erhitzen und dann zwischen 40°C und 80°C verarbeiten, je nachdem ob übergossen oder besprüht wird. Bei kalter Verwendung: Überguss unverdünnt mit bis zu 10% Wasser, Fruchtsaft oder Fruchtmark kräftig durchmixen, bis eine geschmeidige Konsistenz zum Verarbeiten erreicht wird. Bestens auch zur Sorbetherstellung, z.B.: 200g Fruchtpüree, 50g Zitronensaft, 50g Nappage mit Mixstab mixen und im Pacojet einfrieren, ablassen und sofort verwenden. Das Sorbet hat einen tollen Glanz und ist länger standfest.

I bought this set to replace a stainless steel set I have after the nickel in the stainless steel cookware starting leeching into my food and causing some pretty severe reactions. I made sure to read the instructions that came with this ceramic-coated cookware before use, and made a note to not heat it on high - I have cast iron for that anyway. I appreciate how light weight this cookware is, and how easy it is to clean with soap and water - I don't put my cookware in the dishwasher. So far it appears to work well making sauces, heating vegetables, cooking pasta, but I do have to plan a little extra time to get water to boil, of course. One thought for the designers - it would be helpful if the lids fit more than 1 pot. It would be nice, for instance, for the large pot lid to fit the large skillet for sauces that need to simmer and/or reduce for a while. Overall, this cookware is an extremely good value and I'd purchase it again.
